Three years ago, I was really creeped out by all types and forms of corn after watching the documentary King Corn.

Thankfully that’s no longer the case, because I keep running into dishes with corn, baked goods with corn, and unexpected uses of corn, like Tryst Coffeehouse‘s corn flan*. The flan was creamy and custardy like any other flan, but the corn (blended with the creamy inside and caramelized on top) added a stronger backbone of texture than you normally expect. Loved it!

*I totally thought this was going to be a kind of corn bread since I didn’t read the menu too carefully. Whoops, dessert fast…
