Such incredibly smooth, freshly hand-made gnocchi in hearty, chunky meat sauce I have never tasted before. I never really enjoyed gnocchi before since the potato dumplings are either too starchy or too dry (or worse, both), but each bite was so creamy and smooth, yet retained its texture (so not becoming gross mushy pasta) and chewiness. Filomena’s classic “Gnocchi della Mama” gives me a great deal of optimism that all their other pasta entries will be just as incredible. I didn’t get to see the “pasta mamas” doing their thing when I went last week, but will keep an eye out for the talented pasta-making ladies next time!
