Baohaus‘ signature Chairman Bao. Pork belly may be a recent foodie fad, but this ingredient’s been used for Chinese banquets for forever! I love it, even while I cringe a little thinking about what pork belly really is. (It’s fat, at least most of it!) Baohaus baos were smaller than expected, definitely much smaller than Taiwan’s guabao (I was remembering the famous guabao stand at Gongguan night market) but a perfect quick lunch in between hammering out a paper and going out later to eat three dinners in New York…
