I caught up with my friend Cindy over brunch at Peacock Cafe, where I just had to try their eggs benedict – poached eggs over smoked salmon, topped with Hollandaise sauce. I substituted the fries for fresh fruit, which added just enough sweet tang and healthy points (because that’s totally a thing) to counter both the savory flavor and the niggling thoughts of omg-how-terrible-is-the-egg-yolk-and-hollandaise-for-you.
