Pistachio Matcha Cookies

Priya shelled pistachios for a solid half hour, scattered the shells all over the coffee table (just kidding), and then mixed the ground pistachio with matcha powder, almond meal, and sugar – an Indian/Asian twist on the doughier traditional Italian cookies, Bocconcini al Pistacchio di Bronte. Topped with a little powdered sugar and whole pistachios, these perfect teatime cookies paired well with a steaming cup of light green tea.
