I’m a big fan of onions, including the process of cutting up onions myself. Onions engage every sense from their papery skin to the inner smooth, waxy texture, the sudden stinging of the eyes, the sharp bite that becomes sweet and earthy then bitter, opaque then translucent then (sometimes) golden and charred. Onions absorb and flavor at the same time, a both cooperative and influential vegetable.
