This past weekend was unseasonably warm for February, though we made up for it with exceptionally strong winds. For dinner one night, I tossed the remainder of my rotini pasta with some olive oil, diced tomatoes, ripped-up basil, sweet corn kernels – a little bit of thyme because, well, to be honest, adding herbs makes me feel fancier!

By the second bowl, I decided adding some cheese (I had Parmesan on hand) would make everything taste even more fantastic. I love colorful, light-tasting  pastas once spring and warmer weather get underway. Once the farmers markets open up, a whole array of produce will make eating healthily much more exciting.
