Known as the Filipino national dish, Chicken Adobo is a very flavorful, generally crowd-pleasing chicken dish that I love with a lot of garlic, heaps of onions (and sometimes carrots, as shown in the photo above), and a little bit of ginger in addition to the traditional marinade of soy sauce and vinegar. I didn’t have any bay leaves, but I figured there were already so many smells and strong flavors in the chicken – not to mention basil in the accompanying salad. I served the chicken with mixed brown rice and red quinoa, to keep things colorful, and some garlic naan, just in case there wasn’t enough garlic (or starch) to go around.
