A Danshui specialty, these meat-filled fish balls, or yu wan (魚丸), in clear soup are a necessary stop on a cold evening. The freshly-made yu wan are perfectly cooked to a firm, yet tender degree of resiliency, locking in the ground meat and sauce inside.
