The flash-fried noodles are quickly cooked in some kind of broth before they are scooped out and placed, mostly dry, in a takeout box with a medley of meat, fish slices (魚片), a poached egg, veggies, and a little sauce. Tossed together, this dry form of ramen is the perfect lunch to eat in the shade on a hot day – cooler than a hot bowl of soup noodles, but still hearty and flavorful in the mysterious way you just can’t reproduce at home.
