Of course, my conclusion is drawn after only a weekend in Tainan, but I surmise that food in the south of Taiwan is generally superior. Meat and produce is certainly fresher, and the xiaochi certainly more authentic – many dishes originated here, after all. This particular oyster broth was richly flavored with fresh, plump, meaty oysters, and yet not heavy or excessively flavored as some soups can be when masking dull seafood.
