Enjoying a portion of chou doufu (臭豆腐), or fermented (stinky) tofu, is perhaps THE defining initiation into the local food culture because it is certainly not every waiguoren‘s cup of tea. My only objection is how the pungent smell seeps into my clothing, but I’m usually willing to get over it for a quick bite.
