Takoyaki, grilled octopus balls, is prepared by decanting batter mixes with pieces of baby octopus onto these custom griddles, where white batter becomes a delicious golden brown crust. The takoyaki is then sprinkled with green onion, fish shavings, and any combination of sauces you dare try – green laver (made of seaweed rather than wasabi as I first imagined), okonomiyaki sauce (sort of like Japanese A1), mayonnaise, and ponzu.
