Fried anchovies: crunchy, salty, and very suggestive of the marina. Anchovies often complement a bowl of otherwise bland porridge or a salty side dish pair with dried tofu (dou gan), though I am sometimes surprised when a dish arrives and voila – there they are hanging out in between the mushrooms and rabe, or at the bottom of the soup bowl.
