One of many signature specialties of Yingge (鶯歌) – half an hour by train outside Taipei city – is apo sushi (阿婆壽司). Apo sushi consists of rice, mayonnaise-coated salad, and rou song meat flakes, all wrapped in a thin tofu skin. Not being a fan of mayonnaise and the sour rice and skin layer, I couldn’t appreciate this dish, but the local customers crammed in the restaurant certainly must have.
