Egg pancake” is really the thinnest layer of “pancake” fried with eggs, green onions, and occasionally with meat – not a pancake as we know it at all. Danbing (蛋餅) for breakfast comes with the thrill of snatching the slippery slices with oil-coated chopsticks, then gingerly devouring each piece two seconds after being transfered from a hot frying pan to your plate or take-away box. Just try to eat it efficiently and discretely on public transportation or while walking; it’s impossible, but so is waiting to eat properly.
