Douhua, often described as tofu pudding, can be eaten warm or over ice, topped with brown sugar syrup, soft, boiled peanuts, and a hint of ginger. The tofu is so fine that it disintegrates as soon as the spoon meets your mouth, and when prepared with ice, provides the perfect refreshment for those sweaty, lethargic afternoons that preclude even chewing.
